Lemon Berry Buttercream Pancakes

Sift together:
1 1/2 cup all purpose flour
3 Tbs. sugar
1/2 tsp. salt
2 tsp. baking soda
At room temperature, whisk together:
1 cup buttermilk
1/2 cup sour cream
1/4 cup melted butter
2 eggs, seperated, plus 1 extra egg white
1/2 tsp. vanilla
1/2 Tbs. freshly grated lemon zest
Whisk milk mixture into flour. Let batter rest about 10 minutes. Beat 3 egg whites into soft peaks and fold into batter just before cooking. Use about 1/4 cup of batter per pancake. Cook completely on one side. Sprinkle on a few blueberries, then turn to finish cooking.
