Lemon Souffle Pancakes

3 eggs separated
Juice from one lemon
2 Tbsp. Vegetable oil
1/2 cup flour
1/4 tsp. salt
1 cup cottage cheese
Zest from one lemon
1 Tbsp. maple syrup
2 tsp. baking powder
Beat the egg whites until very stiff, set aside.
Combine egg yolks, oil, cottage cheese, maple syrup, lemon juice, and zest in a food processor or blender and blend the ingredients thouroughly. Pour batter into a bowl. In a separate bowl, mix the flour, baking powder and salt. Add this dry mixture to the batter, stirring until well mixed. Fianlly fold egg whites into mixture.
Cook on 375 degree greased griddle in 1/4 cup portions.
