2 cups pancake, waffle mix or biscuit mix
2 tablespoons brown sugar
1 tablespoon cinnamon
1 12-ounce can evaporated milk
1 cup pumpkin
3 tablespoons vegetable oil
2 teaspoons vanilla extract
2 eggs



Recipe



Mix first 3 ingredients in medium bowl, then add the rest of the ingredients and beat until smooth. Cook in a frying pan over medium heatuntil edges are dry and some bubbles form. Turn and cook until other side browned.
