Pumpkin Raisin Pancakes

1 1/2 cups flour
3 1/2 t. baking powder
1 t. cinnamon
1 t. salt
1 t. nutmeg
1 t. allspice
1 1/4 cups canned pumpkin
3 eggs, beaten
1 cup sugar
2 cups milk
3/4 cup vegetable oil
1 t. vanilla
1 cup raisins
Preheat griddle. Into a large bowl, sift flour, baking powder, cinnamon, salt, nutmeg and allspice. Add pumpkin to eggs, beating to blend well. Stir in sugar, milk, oil and vanilla. Add dry ingredients to this mixture, stirring well. Mix in raisins. Ladle batter onto heated and slightly greased griddle. Bake until golden brown on both sides. Serve at once, topped with maple syrup and Hazelnut Pecan Glazed Apples, or Orange Marmalade Syrup (see recipes below)
Orange Marmalade Syrup
This is also delicious over the pumpkin pancakes.
Yield: 1 cup
2/3 cup maple syrup
1/3 cup orange marmalade
Combine ingredients in a small saucepan; bring to a boil. Serve hot.
