Savory Sausage and Egg Bake

1 lb bulk pork sausage
1/4 lb mushrooms
8 green onions w/tops
2 medium tomatoes
2 cups shredded mozzarella cheese
1 1/4 cups bisquick
1 cup milk
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried oregano leaves
1 dozen eggs
Recipe
Heat oven to 350 degrees. Grease or spray bottom and sides of 9X13 pan.
Cook the sausage in skillet over medium heat 8-10 min or until it is no longer pink. Strain grease and discard grease.
Cut mushrooms into slices. Cut and discard the tip of the green onion with the stringy end. Cut green onions into thin slices, including some of the green part. Chop the tomatoes. Layer the sausage, mushrooms, onions, tomatoes and cheese in the 9x13 greased pan.
Beat the Bisquick, milk, salt, pepper, oregano and eggs in a large bowl with a fork or wire whisk until well mixed. Pour over sausage and cheese mixture.
Bake uncovered 30 to 35 minutes or until golden brown and filling is firm. To do ahead of time, mix, cover and refridgerate up to 24 hours. Bake uncovered 40 to 45 minutes or until golden brown and filling is firm.
