    serves 3

    1/2 small white onion, sliced thin
    2 tbsp. canola oil
    1/2 cup salsa
    1 1/2 cups cooked red skins, rough chopped
    3/4 cup shredded, cooked Fresh Chicken
    4 tbsp. thin sliced scallions

    Recipe



    In a large non stick pan over medium heat, cook onion in oil until it begins to brown. Add salsa and cook 1 minute. Add potatoes and cook until hot and mixture comes together. Stir in chicken. Heat through. Place scallions on top of each serving.
