    Cinnamon Baked Apples With Apple Butter

    4 large Washington apples
    8 tsp. & 1/3 c. cinnamon sugar
    ½ c. apple butter

    Preheat oven to 450 degrees. Cut a thin slice from top of apples. Core apples, removing any seeds, leaving the flesh and inch thick at the apple's base. Also, cut a small slice from the bottom so they don't wobble. Sprinkle inside each apple with 1 tsp. cinnamon-sugar. Fill each hole with about 2 tbsp. apple butter. Dust top of each evenly with 1 tsp. cinnamon-sugar. Place filled apples in a shallow baking dish or pie pan. Add 1 inch of water. Bake 45-50 minutes until tender. Let cool to room temperature.

    Put remaining 1/3 cup cinnamon sugar and 1 cup water in a small saucepan. Bring to a boil and boil 1 minute. Lower heat to a simmer and cook, stirring constantly, until it is the consistency of a thick honey. Whisk in 3 tbsp. water and stir until smooth. Remove from heat. Drizzle baked apples with warm or room temperature sauce.
