    1 cup all-purpose flour

    1 1/4 cups sugar, divided

    2 teaspoons baking powder

    1/2 cup milk

    1-2 drops red food coloring, optional

    1 tablespoons vegetable oil

    Whipped cream or ice cream, optional

    1/8 teaspoon almond extract

    1 can (14 ounce) water packed pitted tart cherries, well drained

    Recipe



    In a mixing bowl, combine flour, 1 cup sugar, baking powder, milk and oil. Pour into a greased 9-by-9 greased baking pan. In a bowl, combine cherries, food coloring if desired, extract and remaining sugar. Spoon over the batter. Bake 375 degrees for 40 to 45 minutes until done. Serve warm with whipped cream or ice cream. Serves 4.
