Chocolate Brandy Pudding Cake

1 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup sugar
pinch of cinnamon
1/2 cup cocoa
1/4 cup milk
1/4 cup cream
1 tsp. pure vanilla extract
4 Tbsp melted sweet butter, cooled
3/4 cups dark brown sugar
1/2 cup Brandy
1 cup boiling water

Recipe
Sift flour with baking powder, baking soda, salt, 3/4 cups sugar, cinnamon and half the cocoa. Set aside.
In bowl, combine milk, cream and vanilla extract. Pour the wet ingredients into the dry ingredients along with the melted butter. Stir to make a thick batter. Spread evenly in a ungreased 9 inch baking (only use a glass baking pan).
In a small bowl, combine brown sugar, remaining white sugar and remaining cocoa. Sprinkle evenly over the batter. Combine brandy and water and pour over the top of the batter.
Bake in preheated oven at 350º for 50 minutes (HINT...The cake will be set around sides and the top loose and bubbly. Cool in pan for one hour or more.
Serve with whipped cream
