    Coconut Upside Down Cake

    1¼ c. sifted cake flour
    1¼ tsp. baking powder
    ¼ tsp. salt
    ¾ c. sugar
    4 tbsp. butter or margarine
    1 egg, unbeaten
    ½ c. milk
    1 tsp. vanilla

    TOPPING:
    4 tbsp. butter or margarine
    1/3 c. brown sugar, packed
    4 slices pineapple, cut in wedges
    ¾ c. coconut, toasted

    Sift flour once, measure, add baking powder, salt, and sugar and sift together 3 times. Cream butter. Add dry ingredients, egg, milk and vanilla and stir until all flour is dampened; then beat vigorously 1 minute. Melt 4 tbsp. butter in 8x8x2" pan or 8" skillet, over low flame; add brown sugar and coconut; cook and stir until thoroughly mixed. On this arrange pineapple wedges. Turn batter out on contents of pan. Bake at 350 for 30 min., or until done. Loosen cake from side of pan with knife or spatula. Turn upside down on dish with pineapple on top. Garnish with whipped cream, if desired. Serve warm.

    Note: For best results, have all ingredients at room temperature before mixing.
