Ed Radzvilla Maple Walnut Cake

Butter or margarine for greasing pan
2 cups all-purpose flour
3 1/2 teaspoons baking powder
7 eggs, separated
3/4 cup granulated sugar
1 cup brown sugar
1/2 cup vegetable or canola oil
3/4 cup coffee or water
2 1/2 teaspoons maple extract
1 cup chopped walnuts mixed with 1 teaspoon all-purpose flour
Grease 9-by-13-inch baking pan with butter or margarine. Preheat oven to 350 degrees.
Sift flour with baking powder; set aside.
In clean bowl, beat egg whites until stiff; gradually add granulated sugar, beating constantly until stiff and glossy. Set aside.
In separate bowl, beat yolks and brown sugar until well-blended. Combine oil and coffee or water. Alternately add 1/3 portions of flour mixture and oil mixture, beating between additions, until mixture is well-combined. Stir in walnut mixture.
Gently fold in egg whites. Place in prepared pan. Bake in preheated oven 1 hour or until toothpick inserted in center comes out clean.
Yield: About 12-14 servings
