Farm-Fresh Peach Crumb Pie

Pie Filling:
3 tbsp all-purpose flour
1/3 cup granulated sugar
1/2 tsp ground cinnamon
4 cups fresh peaches, peeled and sliced
1 8-inch pie crust shell
Pie Topping:
1/2 cup brown sugar
1/3 cup all-purpose flour
1/3 cup rolled oats
2 tbsp butter, softened
Recipe
Preheat oven, with a baking sheet on a middle rack, to 375 degrees F.
In a large bowl, using the pie filling ingredients only, combine flour, sugar and cinnamon; stir in peaches and toss to coat well. Pour mixture into pie crust.
In a small bowl, using the pie topping ingredients only, combine brown sugar, flour and rolled oats. Cut in butter until crumbly. Sprinkle topping over pie.
Place pie on top of the preheated baking sheet and bake for 40 minutes, or until golden brown.
Remove from oven and let stand for 10 minutes. Serve warm as is or with a small scoop of vanilla ice cream on top.
