MARASCHINO CHERRY CAKE

2� cups sifted cake flour
1� cups sugar
3� tsp. baking powder
1 tsp. salt
� cup Crisco
� cup milk
� cup Maraschino cherry juice
1 tsp. vanilla
2 tsp. almond extract
4 egg whites, unbeaten
18 maraschino cherries, well drained & chopped fine
� cup chopped nuts
Sift the flour, sugar, baking powder and salt into a mixing bowl. Drop in the Crisco. Combine the milk & cherry juice. (Use just � of this liquid). Add the flavoring and beat for 2 minutes. Add the remaining liquid and the egg whites and beat for 2 minutes more. Bake in 2 9" square pans in a 375� oven for 20-25 minutes.
Frosting:
2 tbsp. Crisco
2 tbsp. butter
1 tsp. vanilla
� tsp. almond extract
� tsp. salt
4 cups powdered sugar
9 tbsp. scalded cream
a little red food coloring.
Mix all together and frost
