    2 cups crushed vanilla wafers
    1/2 cup melted margarine or butter
    1 (12-ounce) can evaporated milk
    1 (3-ounce) package lemon gelatin
    8 ounces cream cheese, softened
    1 cup sugar
    1/3 cup lemon juice
    1/4 teaspoon yellow food coloring

    Mix cookie crumbs and melted margarine in bowl. Reserve 1/4 cup of the mixture. Press remaining mixture into 9x13-inch dish. Chill in refrigerator.

    Chill evaporated milk in large mixer bowl. Freeze until ice crystals form.

    Prepare gelatin using package directions, omitting cold water. Chill until partially set.

    Combine cream cheese, sugar, lemon juice and food coloring in mixer bowl; beat until smooth. Add gelatin; mix gentle.

    Whip evaporated milk in mixer bowl until stiff peaks form. Fold in cream cheese mixture. Spoon into prepared crust. Sprinkle with reserved crumb mixture. Chill in refrigerator for up to 5 days.
