    Skillet Pineapple Upside Down Cake

    shortening
    1 cup brown sugar, packed
    1/2 cup butter or margarine, soft
    1 cup sugar
    3 eggs
    2 cups cake flour
    1/2 tsp salt
    3 tsp baking powder
    2/3 cup milk
    1 tsp vanilla
    1-20 oz can sliced pineapple, drained
    maraschino cherries


    Preheat oven to 350 degrees F. Grease the inside of a 10" cast iron skillet; sprinkle the brown sugar in the bottom and set aside. In a large bowl cream together the butter and sugar with an electric mixer. Beat in the eggs. In separate bowl mix together the flour, salt and baking powder. Gradually add to butter mixture, alternating with the milk, mixing well between each addition. Add the vanilla. Arrange the pineapple slices in a single layer over the brown sugar and place a cherry in the center of each one. Carefully pour the batter over the pineapple and bake for about 45 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely, then invert onto a cake plate.
