¾ c. shortening
2 c. fine granulated sugar
2½ c. sifted cake flour
¼ c. sifted cornstarch
3 tsp. baking powder
½ tsp. salt
1 c. milk
1 tsp. vanilla
1 tsp. lemon juice
7 egg whites
Cream shortening well, add sifted sugar, a small amount at a time, and cream until very light and fluffy. Sift together cake flour, cornstarch, baking powder, and salt. Mix milk, vanilla, and lemon juice. Mix in some flour, then some milk, alternating until all is used. Do not overmix. Fold in stiffly beaten egg whites. Pour into two 9" cake pans which have been oiled and lined with waxed paper. Bake at 350 for 30 min. Cool and spread with filling. (Cook recipe twice for wedding cake. One recipe makes 1 med. sized deep cake and 1 small deep cake, or 1 large deep cake. Increase baking time 20-30 min. if pan is very deep.)
Filling: Make a double quantity of boiled or 7-min. icing. Save ½ for frosting cake. To ½ the frosting add the following filling, prepared and ready to add to frosting immediately when it is done.
1 c. stiffly whipped cream
1 c. rolled dry macaroons
½ c. chopped walnuts
½ c. blanched chopped almonds
½ c. candied cherries, quartered
6 figs, cut in thin strips
½ chopped seeded raisins
4 tsp. lemon juice
½ tsp. orange extract
4 tbsp. sherry
