Spicy Gingerbread Cake with Tangerine

/2 cup fresh egg whites
3/4 cup packed brown sugar
3/4 cup molasses
1/2 cup applesauce
1/4 cup canola oil
3 and 1/2 cups flour
2 teaspoons baking soda
2 teaspoons ginger
1 and 1/2 teaspoons cinnamon
2 teaspoons cloves
1 teaspoon allspice
1/2 teaspoon baking powder
1 cup boiling water
3 teaspoons tangerine zest
1/3 cup tangerine juice
2 and 1/2 cups powdered sugar, sifted
3 cups fresh blackberries
2 ounces white chocolate, shaved to make curls
8 mint sprigs
Preheat oven to 350 degrees.
Beat egg whites; add brown sugar, molasses, applesauce and oil. Sift and mix next 7 dry ingredients; add egg mixture and stir. Fold in hot water. Stir in 2 teaspoons of tangerine zest.
Pour into 8 well-greased 4-inch sponge cake pans. Bake for 20 to 25 minutes, or until done. Remove from pan and let cool for 10 to 15 minutes.
Whisk together tangerine juice, powdered sugar and remaining teaspoon of zest until smooth for glaze.
Place cake on plate and pour glaze over top and sides. Garnish with fresh blackberries. Sprinkle with white chocolate curls. Garnish with mint sprig
