Use can use good Oleo.
Not quite 1/2 block of butter. (not a stick but a block)
2 ½ cups white sugar
1 cup ½ and ½ cream and milk
2 tablespoons Karo syrup white
Put 2 cups sugar in a saucepan (cast iron) add milk, butter, and Karo. Stir until almost dissolved put on a very low slow fire.
In meantime take other ½ cup of sugar put in a dry skillet putting on low flame and stir until it melts to a nice caramel color and pour into milk and sugar mixture. Let boil on medium fire stirring to melt caramel. Now it’s the time for-cooking which is very important. When it makes a ball which does not spread apart when dropped in a glass of water it is ready. Let stand aside to cool a little while you beat and it thickens almost like cake batter consistency.
Butter a 9x9 pan and add pecans to mixture. Pour in pan to cool and harden. Cut in small squares.
If mixture does not turn properly (before adding pecans)
Put in a pot of water (like a double boiler) and cook again.
You will have to try to do it lots of times, I guess, before you succeed.
Practice makes perfection.
You can try to beat a little in a bowl to test.
