6 Cheese & Tomato and Lasagna ala Pesto

ricotta,lasagna sheets, fresh basil, fresh oregano,extra virgin olive oil,5 italian cheese blend,plum tomatoes (if in season),salt,pepper,fresh garlic,bread crumbs(optional)

(for every two bunches of basil use one stem of oregano and 3 heeping spoonfulls of ricotta.)
chop basil,garlic, and oregano coursly and put in blender or food prosesser.when very fine add enough olive oil in mixture to cover but not overwhelm. Add salt and pepper untill you think it tastes good. Add ricotta and slowly mix together. Add more salt and pepper. in a large pot boil water,cook lasagna sheets one by one and set on a cutting boares . Brush olive oil on each sheet then season with salt and pepper.cut tomatoes in strips (do not take out the seeds.) in a caserole pan cover the bottom with lasagna sheetes. then spread the pesto/ricotta blend on to followed by cheese and tomato.repeat prosses untill caserole is filled to the top. add more cheese and top with bread crumbs. bake according to your lasagna sheets instructions.
