Baked Frankfurters And Rice

Recipe Introduction
This makes two 8 x 8 inch pans of this. You can eat one and freeze the other!
List of Ingredients
1 C. rice, uncooked
1/2 tsp. salt
2 C. boiling water
1 lb. frankfurters, cut in 1/2" slices
1 can (29 oz) diced tomatoes
2 T. sweet pepper flakes (never heard of this)
1/4 C. instant minced onion
1/2 lb. shredded cheddar
1 tsp. salt Recipe
Preheat oven to 350º
Place rice in a large baking pan. Add salt and water. Stir and cover and bake about 20-30 minutes or till most of the liquid is absorbed. Remove from oven and let stand for 5 minutes.
Combine cooked rice with remaining ingredients.
Pour half of the mixture in each 8 x 8 inch pan. Pack food tightly to avoid air pockets.
Heat oven to 400º
Bake 45 minutes till pepper flakes and onion are tender.
