Cheesehead Chawanmushi

List of Ingredients
1-1/2 C. water
1 strip home-style bacon, cut crosswise into small thin strips (divided)
1/2 cob of fresh corn, kernals removed, cob reserved
3 large eggs, gently beaten, (avoid frothiness)
2 to 4 large cheese curds, cut into pea-size pieces
2 to 4 small okra, cut crosswise into small flower-shaped pieces
1 tsp. soy sauce
Salt to taste
1/2 tsp. white pepper
Recipe
Combine 1-1/2 C. water, half the bacon strips and corn cob in small saucepan; simmer 10 minutes.
Discard cob; strain liquid into bowl (give the cooked strips to your dog). Cool to room temperature, then combine with beaten eggs, soy sauce, salt and pepper. Strain mixture again, through a fine sieve or cheesecloth. divide the corn kernals, remaining uncooked bacon pieces, cheese curd bits and okra into four custard cups. Ladle individual cups 2/3 full with egg mixture.
Bring water to a boil in a steamer. Cover cups tightly with foil; place in steamer, cover and cook over medium-low heat untilo barely set, 15 to 20 minutes. (Or you can bake the custards, uncovered at 350*, in a casserole dish with hot water that comes halfway up the cups.)
Serve hot.
