El Ranchero Enchilada Casserole

List of Ingredients
1 (14 ½ oz.) can tomatoes
1 small yellow onion, chopped fine
4 cloves garlic, minced
½ tsp. ground red pepper (cayenne)
½ tsp salt
1 can tomato paste (6 oz)
1 lb ground beef, browned
1 pkg dry taco seasoning mix
2 ups shredded cheddar cheese
9 corn tortillas
Recipe
Cook ground beef according to directions on taco seasoning mix.
Sauce:
Blend tomatoes with onion and garlic in blender and puree. Pour in medium sauce pan. Add pepper, salt and tomato paste. Mix well and bring to a boil, then simmer 5 to 10 minutes.
Place 3 tortillas in the bottom of crock pot. Layer tortillas (3 at a time), 1/3 of ground beef mixture, 1/3 tomato sauce and 1/3 of cheddar cheese. Repeat layers 2 more times, ending with cheese. Cover and cook on low for 3 hours.
