2 pounds ground beef
1 medium onion, chopped
1 can (15 oz) black beans, rinsed and drained
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 teaspoon salt
4-6 flour tortillas
1 can (10-3/4 oz) condensed cream of mushroom soup
1 can (10 oz) diced tomatoes and green chilies, undrained
2 cups shredded cheddar cheese
Recipe
Brown the beef and onion in a skillet until beef is fully cooked. Drain. Add beans, chili powder, cumin and salt; mix well. Spread Beef mixture in bottom of a greased 13" x 9" x 2" baking dish. Arrange the flour tortillas over the meat mixture. Combine the soup and the tomatoes with green chilies, mixing well. Pour over the tortilla layer and sprinkle with the cheese. Bake, uncovered, at 350º for 25 to 30 minutes, or until fully heated.
