Fried Rice Vermicelli

400gr rice vermicelli
1 ½ cups cabbage, finely shredded
½ cup carrots, sliced in strips
½ cup green beans, thinly sliced
2 eggs
¼ cup spring onions, finely chopped
2 tbsp oil, divided
1 tsp salt
2 tbsp soy sauce
1 ½ cups chicken stock
¼ tsp ground pepper
2 cloves garlic, minced Recipe
Soak the rice vermicelli in hot water for 5 minutes; drain. Beat the eggs; fry in wok with ½ tbsp oil. Thinly slice; set aside. Brown the garlic in the remaining oil. Sauté green beans, carrots and cabbage at 400 F for 15 minutes. Set aside vegetables. In same wok, pour the stock. Let it boil Add in soy sauce, salt, pepper and rice vermicelli. Stir constantly. When it dries up, add vegetables.
Garnish with fried eggs and spring onions before serving.
