Ham and Sweet Potato Casserole

Cooking oil spray (butter flavor)
1-1/2 cups cooked ham, diced
6 cups cooked sweet potatoes
2 eggs beaten
1-1/2 tablespoons lemon juice
1/2 teaspoon salt



Recipe



Spray a 10-inch skillet with cooking spray. Saute ham 2 minutes over medium heat until slightly brown. Whip potatoes until smooth, then add beaten eggs, lemon juice and salt; whip thoroughly. Mix potatoes with the browned ham and any pan drippings. Turn the ham and potato mixture into a 2-quart casserole that has been sprayed on the bottom and sides with the cooking spray. Cover. Bake in 350 degree oven for 30 minutes the remove cover the last 15 minutes. Serve hot to 5.
