Hambuger Deep Dish Biscuit Pie

Filling:
3/4 pound ground beef
3 teaspoons salt
Dash pepper
3/4 cup tomato puree
6 small carrots, sliced lengthwise
1/2 cup peas
2 large potatoes, diced
5 small onions
Crust:
2 cups enriched all-purpose flour
3/4 teaspoon salt
3 tablespoons butter
5 teaspoons sifted baking powder
3/4 cup milk
Recipe
To prepare filling: Grease a casserole dish. Add a layer of meat, flaked with a fork. Sprinkle with some of salt and pepper, add some tomato puree and vegetables and continue to layer within an inch of top of casserole dish. Use enough vegetables to fill space; distribute meat and seasonings well. Pack lightly so there will be room for them to expand as they cook. The tomato puree and the natural meat and vegetable juices will provide sufficient moisture. Place in refrigerator while preparing crust.
To prepare crust: Preheat oven to 400 F.
Sift flour and salt, cut in shortening (with a food processor, if desired); add baking powder and mix lightly. Add milk all at once and mix to form a ball.
Turn out dough on a floured board and knead lightly for about 30 seconds, then flatten ball. Place it over the meat filling and score with a knife dipped in milk.
Bake 25 minutes, then reduce temperature to 300 F and bake 35 minutes longer. Serve as soon as baked.
Yields 4 servings.
