    2 lbs spinach, washed and chopped
    4 tbsp unsalted butter
    1/3 cup chopped onions
    1/2 tsp salt
    pinch sugar
    3/4 cup milk
    3 eggs lightly beaten
    1/2 tsp worchestershire sauce
    1/2 tsp thyme leaves
    1 cup cooked rice
    1 cup grated sharp cheddar cheese

    Preheat oven to 350. Be sure spinach is well-washed. Shake dry. Heat butter in skillet over medium heat. Add onions and cook 3 to 4 minutes, until slightly transparent. Add spinach to onions, sprinkle with salt and sugar, and toss until spinach is wilted. Transfer spinach mixture to colander or large sieve and set over bowl. Press to remove excess liquid and reserve. Add milk, eggs, worchestershire, and thyme to spinach liquid. Whisk to blend. Stir in spinach, rice, and all but 2 tbsp of cheese. Pour mixture into buttered shallow baking dish such as a 11- x 7-inch rectangle or 9-inch round pan. Sprinkle with remaining 2 tbsp cheese. Bake until mixture is set, 20 to 25 minutes.
