Leftover Roast Beef Casserole

1 onion, sliced
3/4 cup celery, sliced thin
2 tablespoons butter
1 envelope mushroom gravy mix
1 cup water
2 cups cubed cooked roast beef
1/4 cup chopped green peppers (if desired)
Rice
salt and pepper, to taste
Recipe
Saute onion and celery lightly in butter. Stir in the gravy mix, water and beef into sauteed vegetables. Cook, stirring, until mixture boils and thickens. Cook rice according to the instructions on the package add frozen peas to the rice. Pour first mixture with the roast beef in a casserole dish, add the rice on top and place in the oven on low to keep it hot before serving.
