    2 lbs. fresh zucchini, sliced
    1 t salt
    1 med. onion, finely chopped
    ½ c butter, melted
    1 can cream of chicken soup
    1 can sour cream
    1 - 8 oz pkg. herb seasoned
    stuffing mix

    Recipe



    Cover the zucchini and salt with water and heat to just boiling, in a pan. Remove from heat and drain well. Sauté the onion in butter until tender. Add the soup and sour cream to the onions. Fold in the cooked zucchini. Alternate layers of the stuffing mix and zucchini mix in a 9x13 pan. Bake at 350º uncovered for 25 minutes.
