Maryland Crab Meat Casserole

1/4 cup plus 1 tbsp butter
3 tbsp flour
2 cups milk
2 tbsp minced onion
1 tbsp minced parsley
1 tbsp minced green bell pepper
1/2 tsp celery salt
1/8 tsp grated orange rind
Dash of Tabasco sauce
2 tbsp sherry or cooking sherry
1 egg, beaten
3 cups flaked crab meat, fresh or canned
1 tsp salt and dash of pepper
1/2 cup fresh bread crumbs
Recipe
Heat oven to 350 degrees. Grease a 1 1/2 quart casserole.
In double boiler, melt 1/4 cup butter. Stir in flour until smooth. Stir in the milk and cook, stirring, until thickened.
Add onion, parsley, green pepper, celery salt, orange rind, and Tabasco. Remove from heat; add sherry.
Stir small amount of sauce slowly into the beaten egg. Stir egg mixture to the sauce in the pan. Stir in crab meat, salt, pepper. Pour mixture into prepared casserole.
Melt the remaining 1 tbsp butter and combine with the bread crumbs. Sprinkle over top of casserole.
Bake uncovered, 15-20 minutes, or until brown.
Tip: Cooking for two? Halve the recipe and use a 1 quart casserole.
