Quaker Mushroom-Egg Casserole

3 to 4 Tbsp oil
1 large onion, chopped
2 stalks celery, chopped
1/2 green pepper, chopped
2 carrots, peeled and chopped
1/2 pound mushrooms, sliced
1 tsp salt
2 Tbsp flour
1 cup milk
1 tsp each parsley flakes, thyme, basil,and curry powder
1 (10oz.) package frozen peas, thawed
8 to 10 hard-cooked eggs, sliced
hot cooked rice
Recipe
Heat oil in skillet and saute onion, celery, green pepper and carrots. Stir in mushrooms and simmer 10 minutes. Remove from heat. Add salt, flour, milk, parsley, thyme, basil, curry powder and peas. Blend well. Place eggs in bottom of butter casserole dish. Spoon mushroom mixture over. Bake at 350 degrees for 20 minutes. Serve over rice.
