    Taco Cornbread Casserole

    1 box jiffy brand cornmuffin mix
    1 can creamed corn
    1 egg
    1/4 cup milk
    1 lb ground turkey
    1 pkg taco seasoning
    1 cup cheddar or colby cheese, grated 1/2 cup finely
    chopped onion

    Recipe



    In a skillet, brown beef or turkey. Drain grease. Add taco seasoning and 1/2 cup water. Simmer for 5 minutes. While meat is cooking, in a bowl, mix corn muffin mix, egg, milk and creamed corn. Spread half of the mixture in a well greased, 8in casserole dish. Pour taco meat on top of cornbread. Sprinkle onions and then cheese. Top with remaining cornbread mixture. (This layer will not be as thick as the bottom--spread to cover the top the best you can.) Bake at 400* for about 30 minutes or until golden and set.
