    Tex-Mex Chile Relleno Casserole

    4 poblano chile’s roasted, stemmed, split open, seeded and peeled
    2 ½ cups sharp cheddar cheese
    2 ½ cups Monterey Jack cheese
    ½ cups flour
    1 ½ cups milk
    3 eggs
    Dash of Salt & pepper

    Recipe



    Preheat oven to 350 degrees
    Spray casserole dish with non-stick cooking spray
    Beat eggs with milk, flour, salt and pepper well
    Alternate layers of chiles, egg mixture, and cheeses
    BAKE for 45 to 50 minutes or until knife inserted in center
    comes out clean. Cool in pan for 10 minutes.

    Assorted garnishes such as chopped tomatoes and cilantro, sliced green onions and avocados, or salsa of your choice
