    That 70's Franks with Potatoes & Spinach

    List of Ingredients




    1/2 cup chopped onions
    6 Tbsp butter or margarine
    1/4 cup flour
    1-1/2 cups milk
    2 cups shredded cheddar cheese (sharp)
    1 10-oz pkg frozen spinach, cooked & drained
    5 cups pared, sliced and cooked potatoes (about 5 medium)
    1 lb frankfurters - cut-up

    Recipe



    In medium saucepan, cook onion in butter or margarine until tender
    Stir in flour. Add milk
    Cook, stirring constantly until mixture thickens
    Remove from heat and add 1-1/2 cups of the cheese, stirring until melted
    Do not put back on heat
    Stir in spinach
    Arrange half of the potatoes in a 9x13" baking dish
    Top with half of the franks and half of the spinach sauce
    Repeat with alternate layers of remaining potatoes, franks and sauce
    Cover and bake at 350° for half an hour to 40 minutes
    Top with remaining half cup of cheese and bake uncovered until cheese melts
    When the amounts are doubled this is good for a crowd
