    Twice Baked Potato Casserole

    8 medium potatoes, baked and cooled
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 pound sliced bacon, cooked & crumbled
    3 cups (24 ounces) sour cream
    2 cups (8 ounces) shredded mozzarella
    2 cups (8 ounces) shredded cheddar
    3 green onions, chopped

    Cut potatoes (skins on) into cubes. Place half in a greased 13x9 inch baking dish. Sprinkle with half the salt, pepper, bacon and onions. Top with half the sour cream.

    Sprinkle with half the cheeses. Repeat layers with rest of ingredients. Bake uncovered @ 350 for 20 minutes, or until cheeses are melted. (Can be assembled
    ahead of time and put in the refrigerator
    until ready to bake)

    Makes 6-8 servings
