    1 21-oz can apple pie filling
    ½ c butter or margarine, softened
    ½ c sugar divided
    ¼ c firmly packed brown sugar
    1 egg
    ½ tsp vanilla
    1 ½ c flour
    ½ tsp baking soda
    ½ tsp salt
    1 tsp ground cinnamon, divided
    ¾ c finely chopped walnuts

    Recipe



    Preheat oven to 375º
    Using a slotted spoon, remove 1 cup apples from pie filling. Save remaining pie filling for another use. Finely chop apples in a blender or food processor.
    In a large bowl, cream butter, 1/4 c sugar, and brown sugar until fluffy. Add egg and vanilla; beat until smooth.
    Add apples to creamed mixture; stir until blended.
    In a medium bowl, sift together next 3 ingredients and ½ tsp cinnamon. Add dry ingredients to creamed mixture; stir until a soft dough forms. Fold in walnuts.
    In a small bowl, combine remaining 1/4 c sugar and ½ tsp cinnamon; stir until well blended.
    Drop dough by heaping teaspoonfuls 2 inches apart onto a greased baking sheet.
    Sprinkle with sugar mixture.
    Bake 10 to 12 minutes or until edges are light brown.
    Cool on wire rack.
