Banana Chocolate Chip Softies

1 ripe, medium banana
1 1/4 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/3 cup butter or margarine, softened
1/3 cup granulated sugar
1/3 cup firmly packed brown sugar
1 large egg
1 tsp. vanilla
1 cup milk chocolate chips
1/2 cup coarsely chopped walnuts (optional)
Preheat oven to 375. lightly grease cookie sheets. Peel banana and place in small bowl . Mash enough banana with fork to measure 1/2 cup. Set aside. Place flour, baking powder and salt in small bowl: stir to combine.
In a separate bowl, beat butter and sugars in large bowl with an electric mixer at med. speed until light and fluffy, Beat in banana , egg and vanilla , scraping down side of bowl once. Add flour mixture. Beat at low speed until well blended, scraping down side of bowl once. Stir in chips and walnuts with mixing spoon. (dough will be soft)
Drop rounded teaspoonfuls of dough 2 inches apart onto prepared cookie sheets. Bake 9-11 minutes or until edges are golden brown. Let cookies stand on cookie sheets 2 minutes, then remove to wire racks, cool completely, store tightly at room temp. these cookies do not freeze well.
