Bittersweet Shortbread Cookies

2 cups (4 sticks) butter, softened
1 cup powdered sugar
3-1/2 cups flour
1/2 cup cornstarch
6 squares Bittersweet Baking Chocolate, coarsely chopped
1 cup Chopped Pecans, toasted
Additional powdered sugar for dusting (optional)
Recipe
Mix butter and 1 cup sugar until light and fluffy. Stir in flour and cornstarch, then chocolate chunks and pecans. Roll dough into 1-inch balls; place on ungreased baking sheets. Flatten slightly with bottom of a glass. Bake at 350°F for 20 minutes or until cookies are set and lightly browned; cool on wire racks. Sprinkle with additional powdered sugar.
