Chocolate Chip Shortbread Cookies

3/4 cup unsalted butter, room temperature
1/2 cup plus 2 Tbs. sugar
1 1/2 tsp. vanilla extract
1 3/4 cups all-purpose flour
pinch salt
1 cup semisweet chocolate chips
Recipe
Preheat oven to 350 degrees.
Butter two 9-inch diameter glass pie plates. Beat butter and sugar in large bowl until fluffy. Beat in vanilla. Mix flour and salt in medium bowl. Add to butter mixture; stir just until blended. Mix in chocolate chips. Divide dough in half. Press 1 half onto bottom of each prepared pie plate. Cut each into 8 wedges, using ruler as guide and cutting through dough.
Bake cookies until light golden, about 20 minutes. Cool completely in pie plates on racks. Recut cookies into wedges. (Can be made 1 day ahead. Store airtight at room temperature.)
