Chocolate Oatmeal Cookies

3/4 cup quick cooking oatmeal
4 cups all-purpose flour
2 tsp baking soda
2 tsp salt
1 cup shortening
1 cup butter or margarine
1 1/2 cups granulated sugar
1 1/2 cups brown sugar, packed
2 tsp vanilla
4 large eggs
4 cups chocolate chips
1 1/2 cups chopped nuts (optional) Recipe
Preheat oven to 375 degrees. In a large mixing bowl, combine the oatmeal, flour, baking soda, and salt. In another mixing bowl, beat the shortening, butter, sugars, and vanilla. Add the eggs one at a time, beating well after each addition. Gradually, beat into the flour mixture. Stir in the chocolate chips and nuts. Drop by rounded tablespoonfuls onto ungreased baking sheets, and bake for 9-11 minutes, or until golden brown. Remove the cookies from the oven and let cool on baking sheets for two minutes. Remove the cookies to wire racks to cool completely. Makes about 150 cookies
