Coconut Dream Bars

Butterscotch layer:
1/3 c. shortening
1/3 c. brn. sugar, packed
¾ c. sifted flour
½ tsp. soda
½ tsp. salt
¾ c. rolled oats
Coconut topping:
2 eggs
1 c. brown sugar
1 tbsp. lemon juice
1 tbsp. flour
Grated rind of 1 lemon
1 c. shredded coconut
½ c. chopped pecans
To make butterscotch layer, cream shortening and brown sugar; sift flour, soda and salt together and stir into first mixture. Add rolled oats. Mixture will be dry and crumbly.
Pat into baking pan (7x11 inches.)
For topping: beat eggs slightly, then add remaining ingredients.
Pour topping mixture over the first layer in the pan. (If desired, this may be put in the refrigerator one day before baking.)
Bake in oven preheated to 350° about 30 min. or until done. Let cool, then cut into bars. Makes 20 bars.
