    Filling:

    3/4 cup sugar
    1 1/2 cups (8 ounces) chopped, pitted dates
    3/4 cup water
    1/2 cup chopped pecans or walnuts

    Cookie Dough:

    2 cups firmly packed brown sugar
    3/4 cup margarine or butter, softened
    2 eggs
    1 teaspoon vanilla
    1/2 cup buttermilk
    3 1/2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    3/4 teaspoon cinnamon

    Recipe



    In small saucepan combine sugar, dates and water. Cook over low heat, stirring occasionally, until thickened (10 to 12 minutes). Stir in nuts; cool.
    Heat oven to 375°
    In large mixer bowl combine brown sugar, margarine, eggs and vanilla. Beat at medium speed, scraping bowl often, until well mixed (2 to 3 minutes). Stir in buttermilk.
    Add all remaining ingredients except filling.
    Continue beating at low speed, scraping bowl often, until well mixed (1 to 2 minutes).
    Drop rounded teaspoonfuls dough onto greased cookie sheets. Place 1/2 teaspoon filling in center of each cookie; drop 1/2 teaspoon cookie dough over filling.
    Bake for 12 to 16 minutes or until lightly browned.
    4 dozen cookies
