Frosted Carrot Bars

4 eggs, beaten
2 cups sugar
1-1/2 cups of cooking oil or applesauce
2 cups flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 cups finely ground carrots
1-1/2 cups coconut
1-1/2 cups chopped walnuts
1-1/2 cups ground raisins, optional
Frosting: Mix:
8 oz. cream cheese
1/3 cup softened margarine
2 tsp. vanilla
3 cups powdered sugar
Recipe
Mix together eggs and sugar. Set aside. Mix oil with flour, baking soda, salt, and cinnamon and add with eggs and sugar. Mix well. Fold in carrots, coconut, nuts and raisins. Bake in 2 greased 9 X 13-in. pans or one big jelly roll pan at 350° F. for 20 to 30 minutes. Frost when cool.
