Gooey Pumpkin Cookies

1/2 cup shortening
1/2 cup white sugar
1/3 cup brown sugar
1 cup canned pumpkin
1 t vanilla
2 cups flour
1/2 t salt
1 t baking powder
1 t baking soda
1 t cinnamon
1 1/2 cups butterscotch chips
Recipe
Preheat oven to 350º
In a mixing bowl cream shortening and sugars. Stir in pumpkin and vanilla till creamy.
In another bowl sift together all dry ingredients. Mix the wet and dry ingredients, fold in chips.
Drop dough by teaspoonful onto greased cookie sheets. Bake for 8-10 minutes.
Allow to cool before removing
Makes about 3 dozen cookies
