3/4 cup butter, softened
3 tbs. sugar
1 1/4 cup flour
1/2 cup cornstarch
1 tsp. grated lemon peel (fresh is best!)
2 tbs. fresh lemon juice
Frosting:
1 cup powdered sugar
1/4 cup butter, softened
1 tsp. grated lemon peel
2 tsp fresh lemon juice Recipe
In a large mixing bowl, combine butter and sugar.
Beat until light and fluffy.
Add flour, cornstarch, lemon peel, and lemon juice.
Beat until a soft dough forms.
Shape dough into 1 1/2" diameter log.
Wrap in plastic wrap and chill for 1-2 hours, or until firm.
Cut logs into 1/4 inch slices.
Place on ungreased cookie sheet.
Bake for 8-10 minutes at 350°, or until lightly browned. Cool completely.
Combine frosting ingredients. Spread evenly on cookies.
Let dry completely before storing in an airtight container.
