    Lemon Meltaways Cookies

    1-1/4 cups flour
    3/4 cup softened butter
    1/2 cup cornstarch
    1/3 cup powdered sugar
    1 tsp lemon juice
    1 tsp grated lemon peel

    Recipe



    Combine all ingredients. Beat at low speed (2-3 minutes).
    Divide dough in half. Shape each half into 8x1" roll.
    Wrap in plastic wrap. Refrigerate (1-2 hrs).
    Cut in 1/4-inch slices. Place 2 inches apart on cookie sheets.

    Bake @ 350° for 8-12 minutes (cookies will not brown).

    Frosting

    3/4 cup powdered sugar
    1/4 cup softened butter
    1 tsp lemon juice
    1 tsp grated lemon peel

    Combine all ingredients, beat at medium speed until fluffy (1-2 minutes). Frost cookies.

    4 dozen cookies
