    2 c flour
    1 c margarine or butter
    1/3 c half-and-half
    3 T cocoa
    1/2 t vanilla Sugar
    30 thin pastel wafer mints

    Recipe



    Combine flour, margarine, half-and-half, cocoa and vanilla. Beat at low speed until well mixed, scraping sides of bowl often.

    Refrigerate dough about 1/2 hour or until firm enough to roll.

    Divide dough in half; return half to refrigerator.

    On lightly floured surface, roll out half of dough to 1/8" thickness. Cut with floured 2" round cookie cutter.

    Dip 1 side of each cookie in sugar. Place sugared side down on prepared cookie sheet. Place mint in center of cookie; top with second cookie, sugared side up. Press fork firmly around edges to seal.

    Repeat with remaining dough. Bake on lightly greased cookie sheets at 375° for 8-10 minutes.

    Cool cookies 1 minute; remove from cookie sheets.

    Store in tightly covered container after cooling completely.
