    Peanut Brittle Cookies

    1 stick piecrust mix
    3/4 c brown sugar
    3/4 c chopped peanuts
    1 slightly beaten egg
    1/2 tsp vanilla

    Recipe



    Mix piecrust according to pkg. directions, but do not roll out.
    Cut in brown sugar until mixture resembles coarse crumbs.
    Add 1/4 c of peanuts, egg & vanilla; mix well.
    On a well greased & floured cookie sheet, spread mixture in 12x12" square.
    Press remaining 1/2 c peanuts into the dough.
    Bake 350° 15-20 minutes
    Loosen edges as soon as cookies are removed from oven.
    Cool on sheet; cut in 2" squares
    Makes 36
