Peanut Butter Oatmeal Cookies

1 c. firmly packed brown sugar
3/4 c. white sugar
1 c. shortening
1 c. peanut butter
2 eggs
2 c. flour (can substitute 1 c. whole wheat)
1 c. rolled oats
2 t. soda
1/2 t. salt
Recipe
Heat oven to 350 degrees F.
In large bowl, combine first 5 ingredients; blend well. Stir in remaining ingredients.
Drop by teaspoonfuls (I roll into small balls and coat with white sugar), 2 inches apart onto ungreased cookie sheet. Press each with a fork (I use my potato masher, the sugar prevents the fork/potato masher from sticking).
Bake at 350 degrees F. for 8-12 minutes or until golden brown.
Immediately remove from cookie sheet.
Makes 60-70 cookies
Note: Since I roll the dough balls in white sugar, I usually cut the sugar in the recipe down by 1/4-1/2 cup. I also add 1/4 cup of unprocessed bran
