    Pineapple-Nut Lekvar Squares

    1 lb butter ( a must - oleo crumbles )
    3/4 - 1 cup sugar
    1 grated lemon peel
    1 tablespoon lemon juice
    3 large egg yolks or 4 small
    1 lb nuts - ground
    1 can 20 oz crushed pineapple
    powdered sugar for garnish

    Cream together all ingredients except flour. When well mixed add flour and mix smooth. Then press into a 13 x 20 cookie sheet with sides.

    Filling Top:

    On top of dough spread a large can of crushed pineapple (or lekvar if desired) Then top with 1 lb ground walnuts. Bake at 350 degrees but check until bottom is browned. (I baked 40 - 45 and it still needed to bake longer). Cool on rack. When cooled sprinkle well with powdered sugar.

    Try 2 T. of water in lekvar to thin out and it will spread over dough better without tearing it up. I always made the pineapple version. Cover with foil and it will stay moist a week.
